There are recipes, and then there are recipes. While there are certainly complex, detailed recipes that I go to again and again because the results are outstanding, in day-to-day cooking, who has time for that? It is a very rare, amazing recipe that can both be ridiculously simple and crave-worthingly delicious.
This is one of of those recipes.
If you haven’t tried Marcella Hazan’s three-ingredient tomato sauce, stop what you are doing, check your pantry (you probably have the ingredients, already), and get to cooking.
Tomatoes + butter + half an onion = heaven. That’s it. The recipe calls for a 28-oz can of whole San Marzano tomatoes, but I will admit, I use a can of already crushed tomatoes, because I stock up on those. I’ve also blitzed diced tomatoes for a few seconds in the food processor and gotten the same terrific results.
I’ve shared this recipe so often, I don’t think there is a friend or family member of mine who doesn’t know it. I’ve made this for a girls’ weekend in wine country, a kid’s birthday party, for big family holidays, and routinely whenever I am in a pinch, and need a quick and simple supper.
This sauce is designed to dress pasta, of course, but I have used it to accompany meats and vegetables, too, with tasty results. Add some fresh parmesan cheese or basil leaves when you serve, if you’d like.
