All over America, many school districts are observing Teacher Appreciation Week. As the daughter of a special ed teacher and a school speech therapist, I admit I am biased—I think teachers should be paid much more! Given that my believing that is true doesn’t make it happen, though, I’m glad that spoiling teachers is a thing.
I need some culinary help. I just signed up to make my daughter’s teacher a dinner as part of teacher appreciation week. She wants Mexican. Need something that’s one dish and reheatable. Some kind of casserole, maybe? My family does not like casseroles, so I need some suggestions. Any ideas? Thank you!!!
Happy to help for such a worthy cause. I have just the thing: Simply Recipe’s Mexican Lasagna. I implicitly trust anything Elise publishes on this site, and I think this casserole will both please your daughter’s teacher, and keep you away from the canned soup casseroles many of us grew up to loathe. You may find you want to make it for your family, too!
